If you have a Microsoft 365 Business Basic or a Business Standard you will get the latest versions of:

For both Windows and macOS. This can be installed up to 5 devices per licence.

Is Internet access required for Microsoft 365?

Internet access is required to install and activate the latest releases of Microsoft Office using your Microsoft 365 subscription. Internet would also be required for your emails to work as well.

Do I keep control of my documents with a Microsoft 365 subscription?

You do. All of your documents that you have created within Office 365 belong to you. You will have an option to save those documents locally to your PC or Mac or onto OneDrive.
